Instead of throwing away the excess pie dough once you've made the pie, you can use it to make ultra yummy cookies. Just tear the dough into pieces, spinkle each one with a healthy amount of cinnamon sugar, place them on a cookie sheet (I usually put one under the pie to make it easier to remove, so the cookies just go right on there) and let it bake with the pie. They are so good! I habitually make a large batch of pie dough, then use it all to make these cookies. Why waste all the pie dough on the pie? That's my motto.
